A dessert warms the heart, especially when it includes a secret ingredient… What is it? Olive oil, of course!
Not just as a final seasoning for a dish, EVO (extra virgin olive oil) is also perfect for preparing delicious desserts.
Here are three easy and tasty recipes you can make!
Olive Oil Cookies
Rich and bold flavor with a special twist. No butter, just EVO, and the result will be unique!
Instructions:
Place the whole eggs and the yolk in a bowl and beat together with the sugar. Then add the olive oil and the zest of one lemon.
Sift the flour and baking powder into a bowl with a pinch of salt, then combine with the previous mixture.
Start kneading until you have a smooth and homogeneous dough. Wrap it in plastic wrap and let it rest in the fridge for half an hour.
After resting, roll out the dough on a floured surface to a thickness of half a centimeter and cut into 5 cm discs. Place them on a baking sheet lined with parchment paper and bake in a preheated oven at 180°C for about 15 minutes.

Margherita Cake
A super soft, simple, and quick dessert to prepare. Perfect for breakfast or a delicious snack.
Instructions:
Pour the eggs into a bowl along with the sugar and beat with an electric mixer. Add the EVO and milk, then sift in the flour and baking powder. The batter should be thick and smooth.
Preheat the oven to 180°C and line a cake tin. Pour the mixture into the tin and bake for 30 minutes. Once the cake is completely cool, dust generously with powdered sugar.

Marbled Cocoa Ring Cake
What’s better than a chocolate marbled dessert? Only the olive oil ring cake! Soft, with few ingredients, and ready in no time.
Instructions:
Place the sugar and eggs in a bowl and beat until the mixture is fluffy and frothy. Gradually add yogurt and olive oil. Then, sift in the flour and baking powder and incorporate everything. Add lemon zest, vanilla, and a pinch of salt. Pour half of the mixture into the mold, and to the other half, add sifted cocoa powder, then pour the second half into the mold.
Bake the ring cake at 180°C in a preheated oven and cook for 40 minutes, lowering the temperature to 170°C for the last 10 minutes.
